45 minutes from Paris, the Hyatt Regency Chantilly opened its doors at the end of 2018 and thus offers a new range of accommodation and gastronomy in the department of Oise. Chef Christophe Scheller has joined the kitchens of this beautiful establishment and is at the head of two restaurants, Craft and Nord, as well as the event offer.

Originally from the Paris region and a graduate of the François Rabelais hotel school, Christophe Scheller cut his teeth in starred restaurants alongside the greatest chefs, from Christophe Pelé to Inaki Aizbitarte and Thomas Boullault, and Thierry Marx. In December 2013, he joined the Park Hyatt Paris Vendôme as Jean-François Rouquette's second in the kitchen. Today, the Chef takes up his first position as Chef at the Hyatt Regency Chantilly. He will be in charge of the Craft and Nord restaurants with the ambition of revealing to his guests gourmet and generous cuisine, based on rigor and respect for the product. Specificity for the North restaurant, Christophe Scheller wishes to highlight authentic northern French cuisine with traditional recipes.

Craft, a market spirit

A renovated industrial building houses the Craft restaurant where seasonal, healthy and gourmet cuisine is served at lunchtime: poultry and celery puree, scallops with watercress sauce, vegetarian risotto ...

As on the market stalls, guests help themselves by choosing from starters, cheeses and desserts made with fresh products carefully selected by Chef Christophe Scheller. Among its producers, the Chef offers products from the Ognon farm, a farm that promises to cultivate products of irreproachable freshness without any pesticides. The restaurant's dishes are also accompanied by regional wines and local drinks.

The space seduces with its large bay windows and impressive volumes. Large, convivial wooden tables, polished concrete floors and raw parquet, metal frames and high ceilings accentuate the loft style. The pastel green tones draw a link with the green outdoor terrace that lights up in summer. The Craft restaurant also has an open kitchen allowing its guests to discover in real time the preparation of their hot dishes. A spirit of craftsmanship that can be found right down to the choice of plates, created by a local artist.

The Craft restaurant welcomes its guests for lunch. In the evening, it gives way to a more elaborate cuisine served in the Nord restaurant which offers a cozy and warm atmosphere.

North, bistronomic cuisine

North, Hyatt Regency Chantilly's second restaurant is open in the evening and offers bistronomic regional cuisine. A restaurant where you can find the conviviality and warmth of northern cuisine with dishes as generous as they are elegant. On the menu, meats, game, fish and shellfish from the Bay of Somme simmered with passion. Example with the Flemish carbonade, a specialty from the North of France revisited by Christophe Scheller.

The restaurant's refined style is reminiscent of the opulence of a theater setting: heavy drapes with an elegant drape, large chandeliers, armchairs with floral patterns in mauve tones, beautiful wooden floors combined with contemporary furniture.
