Marc Veyrat: the signature of a great chef

Known as much for his talent as for his outspokenness, Marc Veyrat takes over the reins of this regular restaurant.

The chef with a hat signs his second Parisian address here, far from the Manigod mountain pastures, still in partnership with Moma Group.

After the opening of RURAL by Marc Veyrat at the Palais des Congrès in April 2017, Marc Veyrat surprises with this new challenge by offering daring cuisine.

For the Fontaine Gaillon, the chef Marc Veyrat signs a menu that puts the spotlight on lake fish, spiced up with light sauces, the chef's scents of the woods and exotic touches and accompanied by a fine selection of wines - nod to the former owner of the premises.

On the menu, a nice selection of vintages - scampi carpaccio and oysters from the shell - and signature recipes such as crayfish casserole or lake fish bouillabaisse. The Rossini beef tenderloin or the lamb with thyme will give pride of place to the meat tradition.

Restaurant

Signed by the self-taught designer Axel Huynh - to whom we owe in particular the decoration of the Hotel Mona Bismarck - La Fontaine Gaillon is embellished and given a new life.

With the ambition to resuscitate the authentic atmosphere of the place that once made its charm, the interiors are built around noble materials that bring excellence and French craftsmanship up to date.

The natural woodwork echoes the soft velvets of the benches, and the place is anchored around the trident of Neptune - a strong symbol of the statue of the young newt which surmounts the Place de La Fontaine Gaillon.
