September 2020 marks a renewal for the kitchens of the Hotel Molitor: the arrival of Chef Martin Simolka and a concept redesigned closer to the clientele.

Martin Simolka has always been passionate about it. As a child, it was by cultivating his small vegetable garden and making cakes for family birthdays that he developed a taste for cooking. But it was only later, after a degree in economics, that he truly devoted himself to his passion.

Martni Simolka made his debut in Germany, his country of origin, and in particular with Chef Thomas Neeser who passed on his passion to him, in the legendary 5-star Berlin hotel, the Adlon Kempinski.

In 2008, he put his suitcases down in Paris.

In the most beautiful Parisian houses and with the greatest, he learns and perfects his imprint: color, meticulous dressings, seasonal products with the shortest possible circuit or even an Asian touch for the call to travel.

From the Pavillon Ledoyen, where he develops his creativity, to the Shangri La, alongside Chef Philippe Labbé who transmits to him a taste for good products and simplicity on the plate so as to focus only on the essentials, and before moving to the legendary George V, it was alongside Chef Raoux at the Peninsula that he would spend his best years as First Sous-Chef.

By becoming Chef of the Urban Brasserie at the Hotel Molitor, he accepts a new challenge where his cuisine will be more raw and authentic with a twist of modernity.

Vegetal and organic for a completely redesigned menu, closer to the customer's desires.

“Cooking is sharing, pleasure and discipline, both with customers and with my team. Joining the Molitor Hotel is a dream for me. What a mythical place where the field of possibilities seems endless! "

A brigade of around thirty people, 5 sous-chefs and a pastry team led by Benoit Gressent since October 2019.

Under his responsibility also banquets, room service, 1929 and rooftop.
